The fastest growing segment of the alcohol industry in the U.S. is hard cider and much of it is produced here at home. The Pacific Northwest is home to thousands of acres of apples and pears but we are also seeing ciders from California, Vermont, New York and the like. A trend is to add other flavors so look for ginger, quince, hops and baking spices to be included in some of the more adventuresome blends. Beer and wine bottles abound as do cans, so domestic cider can now be found in many styles for many occasions.
