There is no question that Japan is the home to Sake. Produced from specific rices that are polished to specific levels of purity, then fermented, Sake is a science in itself. We are starting to see heirloom varieties, some with natural color now being produced as well. A growing segment are the sparkling Sakes and the popularity of the slightly fruity and cloudy Nigori sakes is growing by leaps and bounds.
